Join senior tutor Paddi Clark and learn extended royal icing tecnhiques such as collar work, stencilling and pressure piping. This course will count towards your Skill Master Certificate in Royal Icing Skills.
Course tutor: Paddi Clark
Learn the principles behind designing and making royal iced collars for cakes step-by-step from start to finish, including formal collars and more unusual shapes, colours and patterns. Experiment with texture in icing, masking techniques, stencils, colour combinations and piping over shapes. From delicate, pretty extension work with lace and pressure piping to contemporary, bold side designs, Paddi will show you how to produce a striking piece of work. You will leave with an understanding of more sophisticated royal icing techniques and the confidence to create your own stunning designs.

This is a B2 Extended Skill Development course and will count towards your Skill Master Certificate in Royal Icing Skills. This course is suitable for those who have completed the Foundation Master or have a good grasp of basic royal icing skills.
Students will need to bring an 8” dummy cake that has been coated with the first layer of royal icing on a 12” board that has not been iced.
This course requires some additional equipment which you will be able to pre-order. You will be sent an equipment list four weeks prior to the course.
